breakfast banana muffins

Quick and tasty, these tasty banana muffins are perfect for breakfast or eating on the go. The cooked muffins are suitable for freezing. 

Super Simple Breakfast Muffins

Ingredients: 250g self raising flour, 1tsp baking powder, 110g golden caster sugar, 75g melted butter, 1tsp vanilla extract, 2 eggs, 2 ripe bananas mashed, 120ml whole milk. 

Prep: 15 minutes Cook: 20 minutes

Makes: 12 muffins

Preheat oven to 180c and line two muffin trays. Combine the flour, baking powder and sugar and make a well in the centre.

Mix together the melted butter, vanilla, eggs, bananas and milk then pour into the flour mixture. Mix together lightly until just combined, becareful not to over work the mix.

Place mixture into the muffin cases approx 3/4 full and bake for 20 minutes or until golden brown and cooked through. 

Top Tip: Add a crunch to your muffins by adding chopped walnuts or pecans to the mixture, for a chocolatly treat add in milk, dark or white chocolate chips or for an extra fruity kick add a handful of mixed fruit.
