carrot and coriander soup
Have carrots in the fridge which are looking a bit past their best? Carrot soup is a fantastic way to bring them back to life and provide a delicious soup from a humble ingredient.
Ingredients:
400g carrots, 1 medium potato, 1 onion. 1 garlic clove, 800ml vegetable stock, small bunch coriander
Method:
- Add the sliced onion to a large pan and cook for 4 minutes then add the chopped garlic for a further minute.
- Peel and cube the carrots and potatoes and add to the pan with the vegetable stock.
- Bring to the boil then reduce to a simmer and cook for 20-25 minutes until the carrots and potatoes are tender, season with pepper and the coriander.
- Remove from the heat and blend with a hand blender or food processor and enjoy!
