Chocolate and Caramel Mousse
A classic light dessert that is super easy to make and is a tasty showstopper to complete any dinner party! This chocolate and caramel mousse is a perfect recipe for baking beginners and competent cooks.

Ingredients
150g dark chocolate, 6 egg whites, 2tbsp caster sugar, 50g milk chocolate, 4 tbsp caramel
Method
- Melt the dark chocolate in a glass dish over a pan of water on a gentle heat. Stirring until melted and lump free. Do not allow the water to touch the base of the dish or the chocolate to boil.
- In a clean grease free bowl, whisk the egg whites until they reach a soft peak stage. Then add the sugar while whisking and whisk until it reaches the stiff peak stage.
- Using a metal spoon gently fold the egg whites into the melted chocolate until combined. Spoon the mixture into glasses, ramekins or mugs and set for 2-3 hours. When set, melt the milk chocolate, spoon over the top and swirl through the caramel. Allow to set for a further 30-35 minutes.
