110g butter, 110g demerara sugar, 2 eggs, 4tbsp milk, 220g self-raising flour, 100g desiccated coconut, 110g milk chocolate chips
- Preheat oven to 180 degrees and line a 2lb loaf pan.
- Cream together the butter and sugar until light and fluffy. Add the eggs one at a time with 1 tbsp of the flour, beat until smooth and lump free then stir in the milk.
- Lightly fold in the flour and desiccated coconut until combined. Stir in 100g of the chocolate chips.
- Spoon the mixture into the prepared loaf tin and sprinkle on top the remaining chocolate chips. Bake for 50-60 minutes until golden and cooked through.
