Coconut and Chocolate Chip Loaf Cake

Coconut and chocolate are a match made in heaven! This easy to make loaf cake is simple to make and perfect for slicing up and enjoying with a cuppa!

Coconut and Chocolate Chip Loaf Cake


110g butter, 110g demerara sugar, 2 eggs, 4tbsp milk, 220g self-raising flour, 100g desiccated coconut, 110g milk chocolate chips


  1. Preheat oven to 180 degrees and line a 2lb loaf pan.
  2. Cream together the butter and sugar until light and fluffy. Add the eggs one at a time with 1 tbsp of the flour, beat until smooth and lump free then stir in the milk.
  3. Lightly fold in the flour and desiccated coconut until combined. Stir in 100g of the chocolate chips.
  4. Spoon the mixture into the prepared loaf tin and sprinkle on top the remaining chocolate chips. Bake for 50-60 minutes until golden and cooked through.
