Ingredients: 275g self raising flour, 1tsp bicarbonate of soda, 1tsp baking powder, 1tsp cinnamon, 100g golden caster sugar, 1 orange - zested and juiced, 100g fresh cranberries, 100ml sunflower oil, 150ml milk, 1 egg

1. Preheat oven to 180 and line a muffin tray. Sift the dry ingredients together - flour, bicarb, baking powder, cinnamon, and caster sugar.
2. Beat the wet ingredients together - orange zest and juice, cranberries, oil, milk and egg.
3. Combine the dry and wet ingredients together - be careful not to over mix.
4. Spoon the muffin mix into the prepared muffin tin and bake for 20-25 minutes until the muffins are golden brown and cooked through.
