Easy Biscuits and Cookies for Baking Beginners

Biscuits and cookies are easy to make, quick to bake with a minimal amount of ingredients. Perfect for beginners in baking, baking with kids or those looking for a quick bake, we've put together three of our favourite recipes.

Gooey Chocolate Chip Cookies

Gooey Chocolate Chip Cookies

  • 100g light brown sugar
  • 100g granulated sugar
  • 100g butter
  • 1 medium egg
  • 1 1/2 tsp vanilla extract 
  • 165g plain flour
  • 1/2 tsp bicarbonate of soda
  • 150g milk chocolate chunks
  1. Preheat oven to 180 degrees and line two baking trays. 
  2. Beat light brown sugar, granulated sugar and butter until smooth then add the eggs & vanilla extract
  3. Stir in the plain flour and bicarbonate of soda then gently stir through the chocolate chunks.
  4. Using a dessert spoon, place spoonfuls of mixture onto the baking trays and gently press down to approx 1cm thick. Bake for 12-15 minutes until golden brown.

Lavender Shortbread Biscuits

  • 100g butter
  • 80g caster sugar
  • 160g plain flour
  • 1 1/2 tsp dried lavender 
  • 1 tsp vanilla extract
  • 1 egg yolk
  1. Preheat oven to 180 degrees and line a baking tray.
  2. Mix the butter, caster sugar, and plain flour until the mixture resembles breadcrumbs, then gently stir through the dried lavender and vanilla extract.
  3. Stir through the egg yolk until the mixture becomes a soft dough. If the mixture is slightly stiff add a splash milk and mix again.
  4. Roll the dough out onto a lightly floured surface until 1cm thick. Use a shaped cutter of choice to cut out the biscuits and place on the prepared baking tray. 
  5. Bake for 10-12 minutes until the biscuits are golden brown and cooked through. Allow the biscuits to cool slightly before moving onto a cooling rack.
Jam Drop Biscuits

Jam Drop Biscuits

  • 100g caster sugar
  • 125g butter
  • 1 1/2 tsp vanilla extract
  • 1 large egg
  • 190g self-raising flour
  • 125g jam - strawberry or raspberry taste great in this recipe or use whichever flavour jam you like
  1. Preheat oven to 180 degrees, line a biscuit tray. 
  2. Beat together the caster sugar, butter and vanilla until soft and creamy.
  3. Add the egg and beat until combined, then add the flour and mix until fully combined.
  4. Roll teaspoons of mixture into small balls, place on the baking tray, grently press down, create an indentation in the centre and fill with jam. Repeat with the remaining mixture.
  5. Bake for 15 - 20 minutes until the biscuits are golden brown and cooked through. Remove from the baking tray and allow to cool.
