Easy fruit based cakes and muffins for baking beginners
Fruit based cakes are easy to make, quick to bake with a minimal amount of ingredients. Perfect for beginners in baking, baking with kids or those looking for a quick bake, we've put together three of our favourite recipes.

Apple and Cinnamon Cake
- 135g Caster Sugar
- 115g butter softened
- 50g brown sugar
- 1 1/2 teaspoons cinnamon
- 2 eggs
- 1 1/2 teaspoons vanilla extract
- 200g plain flour
- 1 3/4 teaspoons baking powder
- 125ml milk
- 1 large apple, peeled and cubed
- Preheat oven to 180 degrees, line and grease a 7inch deep sandwich tin.
- Beat caster sugar and butter until smooth then add the eggs & vanilla extract
- Stir in the plain flour and baking powder then add the milk and cubed apples.
- Pour the mixture into the prepared tin, top with the combined brown sugar and cinnamon and bake for 30 - 40 minutes.

Banana Loaf Cake
- 125g butter, softened
- 150g caster sugar
- 1 1/2 teaspoon vanilla extract
- 1 egg
- 2 ripe bananas, mashed, cubed or sliced depending on preference
- 190g self raising flour
- 60ml milk
- Preheat oven to 180 degrees, grease and line a 2lb loaf pan.
- Melt the butter, caster sugar and vanilla extract over a low heat. Once melted remove from heat and add the egg, bananas, flour and milk and mix until well combined.
- Bake for 35-40 minutes until a skewer comes out clean.

Blueberry and Honey Muffins
- 250g plain flour
- 1 tbsp baking powder
- 1 egg
- 225ml milk
- 85g honey
- 60g butter
- 75g blueberries
- Preheat oven to 180 degrees, line a muffin tray with muffin cases.
- Beat together the egg, milk, honey and butter then add the plain flour and baking powder, mix until well combined
- Gently stir through the blueberries then pour the mixture into muffin cases and bake for 20 minutes until a skewer comes out to clean.
