Ingredients: 500g strong white flour, 80g golden caster sugar, 2tsp cinnamon, 1tsp nutmeg, 10g dried yeast, 40g butter, 250ml semi skimmed milk, 1 egg, 250g mixed dried fruit , 80g plain flour
Prep: 3 hours (including 2 1/2 hours proving)
Cook: 20 minutes
Makes: 12 hot cross buns
Mix the flour, caster sugar, cinnamon, nutmeg and dried yeast in a bowl. Melt the butter and milk over a medium heat. Once melted add to the flour mixture then add the beaten egg.
Mix together to bring the mixture to form a dough, add more milk if required. Tip onto a floured work surface and knead for 10 minutes. Place the dough into a bowl, cover with cling film and leave in a warm place for 1 1/2 hours until doubled in size.
