5 egg whites, 1/2 tsp lemon juice, 200g granulated sugar, 2tsp vanilla extract, 200g granulated sugar, 150ml water
- Place the egg whites and lemon juice in a clean dry bowl and whisk until light and fluffy with a soft peak texture.
- Add the first 200g sugar and vanilla extract whilst mixing and continue to mix until the mixture is glossy and the sugar has combined.
- Place the remaining 200g sugar and water in a pan and heat over a medium heat until it reaches 220g degrees on a sugar thermometer.
- Whisking the egg mixture slowly, gently pour in the hot sugar and whisk on high until fully combined, thick and glossy.
