Mastering the perfect biscotti

Twice baked to give them a dry crunchy texture, Biscotti biscuits are perfect for dunking in a cup of tea, coffee or warm mug of hot chocolate. 

Ingredients: 200g caster sugar, 1tbsp almond extract, 120ml vegetable oil, 3 eggs, 1 tbsp baking powder, 400g plain flour

Preheat oven to 180 degrees and line two baking trays. Beat together the sugar, almond extract, oil and eggs until well combined then add the baking powder and flour and stir until formed into a thick dough. 

Split the dough in half, shape into two long rolls, place one of each baking tray and press down until approx 1cm in thickness. Bake for 30 minutes until golden brown, remove and cool then cut into 1cm thick biscuits. Return to the oven for 8 minutes on each side.
