Olive and Feta Pasta Salad - stir through 1 cup of Greek vinaigrette into cooked pasta. Add a handful of pitted olives, rocket leaves and top with lumps of feta.
Speedy Caramelised Onion Cheese Tart - Roll out a pack of puff pastry and shape freely or into a quiche/tart tin. Fill with grated cheese of your choice and add dollops of caramelised onion chutney. Top with seasoning and a sprinkle of Italian herbs then bake for 15-20 minutes until the pastry is golden brown and the cheese has melted. Serve with a side salad and dollops of tomato chutney.
Creamy Mushroom Pasta - slice 300g of mushrooms and saute until browned. Add 1/4 cup of white wine, 1/2 cup of vegetable stock and 1 cup of double cream. Make sure the sauce doesn't boil or the cream will split. Simmer for 2-3 minutes until the sauce thickens slightly. Remove from the heat and add seasoning to taste. Stir through cooked pasta and sprinkle with a cheese of your choice.
Stuffed Portobello Mushrooms - Remove the mushroom stalks, finely chop them and saute in a pan with 1 clove chopped garlic and 1 finely chopped shallot until soft and starting to brown. Remove from heat, stir through 3 tbsp breadcrumbs and 1/2 cup of grated cheddar. Spoon into the mushrooms and grill for 15 minutes.
