Simple Homemade Tomato Passata
Suitable for freezing, this simple homemade tomato passata recipe is ideal for batch storing then adding to meatloaf, lasagne, pasta dishes or pizzas.
Ingredients:
1kg ripe tomatoes quartered, 6 garlic cloves chopped, 1tsp caster sugar
Method:
- Cook the tomatoes and garlic with a drizzle of olive oil in a large pan over a medium heat for 10-12 minutes until the tomatoes have softened and collapsed.
- Add a generous amount of black pepper and italian seasoning along with the sugar then return to the heat for a further 5 minutes. Remove from the heat and allow to cool before mixing with a hand blender until smooth.
- You can freeze the passata for up to 3 months.
