Looking for a quick fix supper for after work or a busy weekend? We've put together our top three quick simple pasta sauces which are ready in a flash. Great for using up leftovers from the week or food cupboard essentials.
A Classic Tomato Sauce - saute one finely chopped onion with 2 finely chopped cloves of garlic, once softened add in a tin of tomatoes. Add mixed Italian herbs to taste and simmer gently for 15 mins. Whilst making the sauce, cook your spaghetti or pasta of choice, once cooked, mix through the sauce and serve with a sprinkling of parmesan.
Pesto Pasta - cook your pasta of choice and take off the heat. Mix through, 1/2 cup of pesto sauce. If the pasta becomes sticky, stir through 1/4 cup of pasta water. Finishing off with a handful of pine nuts, a sprinkling of parmesan and a scattering of halved cherry tomatoes.
Creamy Mushroom Sauce - slice 300g of mushrooms and saute until browned. Add 1/4 cup of white wine, 1/2 cup of vegetable stock and 1 cup of double cream. Make sure the sauce doesn't boil or the cream will split. Simmer for 2-3 minutes until the sauce thickens slightly. Remove from the heat and add seasoning to taste. Stir through cooked pasta. Perfect for using up leftovers including chicken, pork and beef.
