Spiced German Christmas Stollen Recipe

A traditional spiced German bread enjoyed at Christmas, stollen is flavoured using fruit, spices and marzipan.

Christmas Stollen

Ingredients: 140g mixed dried fruit, 4tbsp orange juice, 225ml milk, 3tbsp honey, 85g butter, 450g plain flour, 7g dried yeast, 1tsp nutmeg, 1tsp cinnamon, 1tsp mixed spice, 1 egg, zest of 1 lemon, zest of 1 orange, 250g marzipan, 20g flaked almonds.

Prep: 50 minutes  Cook: 30 minutes  Serves: 15

1. Soak the mixed driend fruit in the orange juice and set aside. Gently heat the milk and honey in a pan then add the butter, remove from heat and leave to cool to room temperature.

2. Mix the flour, yeast, nutmeg, cinnamon and mixed spice in a bowl then add the honey mixture. Add the egg, lemon zest and orange zest and bring together to form a dough. Knead on a lightly floured surface for 10 mins then leave to double in size in a covered bowl for 2 hours. 

3. When doubled in size, knock back the dough and knead in the soaked fruit. Shape the dough into a rectangle. Shape the marzipan into a long sausage the length of the dough, place the marizpan on top of the dough and then encase the marzipan in the dough. Seal the side and place seal side down on a baking tray. Leave for 45 minutes - 1hour to prove until it has doubled in size. 

4. Preheat the oven to 180 degrees. Brush the dough with a beaten egg or milk and sprinkle the flaked almonds on top. Bake for 30-40 minutes until the stollen is golden brown and cooked through.  When cooled dust with icing sugar.
