2 eggs, 80ml milk, 40ml double cream, 1tsp vanilla extract, 1/2tsp cinnamon (this can be substituted with ginger, nutmeg or mixed spice), 4 slices brioche, icing sugar for dusting, 2tbsp maple syrup, 1 banana chopped, handful blueberries
- Whisk together the eggs, milk, cream, vanilla and cinnamon. Pour into a long dish and soak the brioche in the mixture for 2 minutes, turn over and leave for a further 2 minutes.
- Heat a splash of vegetable oil in a frying pan and when hot, place 2 of the brioche slices into the pan. Fry for 3-4 minutes on each side until the toast is golden and crisp. Repeat with the remaining 2 slices.
- Drizzle over the maple syrup, scatter with fresh fruit and a dusting of icing sugar and enjoy!
