  • Start with the best! High quality ingredients really make a difference to your croissants, butter needs to have a high fat content and low water content preferably 82% fat.
  • Keep it cool! Don't try to make croissants in a hot kitchen, the pastry needs to stay cool when being handled and if the kitchen is too hot the butter in your layers may melt.
  • Look after your pastry!  Don't be tempted to be too hard when using the rolling pin, roll gently so that you don't destroy the layers you have built up.  
  • Roll it! Don't be tempted to over flour your work surface when rolling our your dough. 
  • The doughs fighting back! When rolling your dough it should be resist and shrink back, it this happens cover the dough and leave to rest in the fridge for 10 minutes.
  • Check the temp! Do you know if your oven runs hot? Invest in an oven thermometer to check your oven temperature is accurate.
